Blackberry Crumb Bars

Ingredients

  • 3 cups flour
  • ¾ cup cold butter cut into cubes
  • ¾ cup granulated sugar
  • ½ tsp salt
  • 3 beaten eggs

Filling

  • 4 cups blackberries, cut in half
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ¾ cup granulated sugar

Preheat oven to 375 degrees and grease a 9 x 13 inch baking pan. Stir together the flour, ¾ cup white sugar and ½ tsp salt. Cut the butter into pea-sized pieces and add to the flour and sugar mixture. Then stir in the beaten eggs with a fork. Press half of the dough onto the bottom of the baking dish.

In a separate bowl, combine the blackberries, lemon juice, cornstarch, and sugar. Sprinkle mixture over the crust in the pan. Then sprinkle the remaining dough over the blackberry mixture. Bake 30 to 35 minutes or until lightly browned. Let cool and serve.
